1929 Essex Super Six Clean up

Hi everyone, My husband has had an essex sitting around the farm
for many years, so we have decided to clean her up and try get her going again,
it’s a 1929 super six Essex Phatean ( 4 door)  just wondering on
some good advice on where to start, we have took off the canopy the frames fine
but the cover is stuffed, seats have had mice nesting in them we have pulled
them out till we decide what to do, we need to find some tyre’s a windscreen
and a bumper at this stage, We are in Victoria Australia, any advice welcome
