Thermostats

I have been looking on the ole web, looking for information on thermostats. Some have said to use a 160 degree thermostat. Is it advisable to use a 180 of 195 degree thermostat on a flat head cooling system? I will be using a non bypass thermostat housing with a new radiator on my rebuilt 7X engine. Any input will help me out a lot. Thanks
