Are there any "gotcha's" that I should be aware of?
I was also thinking about some high-temp silicone around each bolt and fluid hole.
And what should I put on the threads of the bolt that goes into the water jacket?
Pretty straight forward job. If you use a gasket sealer I prefer Permatex #2. It sets up but doesn't harden. Can also use on the bolts if you prefer. This product has been around a long time, at least back to the 50's that I can recall.

Pacemaker , while you have the water pump off I would pull out the long tube that runs the length of the engine and make sure its clean and the holes in it are not plugged. There is even a method of modifying it a bit for better cooling of your engine.0
