Factory issued weight sheet says "2-Door Club Sedan" - Shipping weight 3025, License weight 3030, weight balance is Front 1570, Rear 1570 for a total curb weight of 3140.

That is a 50/50 weight distribution. Pretty good.

What is the difference between shipping weight and curb weight? Gasoline?

I have noticed that sometimes road test actual weights always seem quite a bit higher than the quoted factory weights.

Road test weights and factory test weights are usually different due to the way they are weighed. The factory weight does not, in general, include such things as spare tire and other things. Like accessories that are added to the car once it's off the line. Difference between shipping weight and curb weight is indeed gas, oil and water included in the curb weight.
